You've got to love the versatility and the "on-the-go" ease of granola. It is the perfect breakfast food and it also doubles as a great snack (on numerous occasions I have seen Kasey eat this stuff out of the pantry by the handfuls, so it must be good). This granola is loaded with protein, good fats, fiber and happy minerals and it goes great with greek yogurt and a few sliced bananas:) At home, we have been going through granola like it's an addiction (and perhaps it is??). Which I guess is not the worst thing in the world, however the cost of this stuff at the store IS! Even the BEST store-bought granola is full of puffed things, miscellaneous granola-esque ingredients and other NON-favorite crunchies. So I decided to try making it for myself and put in our favorite flavours. My mom has made granola for years but I never thought to make it from scratch until now; shocking...I know! This recipe was a great way for me to clean out my pantry. I had a bunch of oats, flax and hemp hearts that needed to be used up so this recipe worked out great.
When it comes to the fruit & nuts; use what you have available. Some of my favorite fruit combinations are listed below, but play around and find out what your families favorite is.
My advice to you is to make sure you keep an eye on the granola close to the end of the baking time, mine browned up quite quickly in the last 10 minutes so don't run away and forget what you were doing (which can sometimes happen to me;) Recipe: Coconut-Cinnamon Granola Love from the ov, Sara
